This Rata honey was recently tested
for activity and came back as 12+!



Certified Organic Rata Honey: Produced predominantly from the
Southern Rata on the West coast of New Zealand's South Island.
One of nature's unpredictable flowers, Rata does not bloom
every year which makes harvesting as unpredictable as the
blooming cycle. On the tongue this monofloral raw honey has
a very intense sweet/astringent flavor that quickly melts into a
fine almost silky texture with a praline butter cream finish.
In contrast to the fructose based sweetness of Blue Borage,
Rata honey is glucose based yielding a sublime, nuanced
flavor. Stir well before using. Rata honey will crystallize
quickly. Certified Organic by Agriquality.

Certified Organic Honeydew Honey: Harvested from the secretions of aphids living in the bark of native black beech trees, this honey is named for its glistening aspect, mimicking the morning dew. Aphids are the nectar harvesters in this case and the bees harvest the "dew" from the aphids. High in minerals, antioxidants, antibacterials, and "active". Certified Organic by Agriquality.

Honey that contains a second type of antibacterial activity in addition to its peroxide activity is called "active". This secondary activity is measured on a scale of 1-20. Certified Organic Thyme Honey: Strong and assertive, this honey is high in antioxidants as well as being "active". Thyme, a member of the mint family, is native to the Mediterranean and was brought to New Zealand by immigrants. Somewhat reminiscent of Rata, Thyme honey has a consistency like very soft taffy and "pulls" like caramel topping. Thyme honey is very silky with a full bodied flavor that has been desribed as cumin, lilac, and maraschino. The flavor has a very long finish. Use sparingly on timid dishes as it can overwhelm less robust flavors. Paired with other assertive flavors this honey will shine. Thyme honey has a very strong floral bouquet that may surprise you.
